The grapes are grown according to traditional, manual techniques. When the bunches are ripe, the grapes are harvested selectively and gradually and placed in slatted boxes to protect the fruit.
The grapes are crushed and immediately fermented using the winery's own grape yeasts. The must is stored in small, temperature controlled vats and, as usual, transferred to small oak barrels for a second fermentation and maturing for four months to enhance the aromas. After stabilizing during the cold winter months, the wine is bottled in early spring, after the first full moon in March.
All fruit pleasure in the glass. Aromas of red plum, cherries, chocolate and a fine woody note stimulate the senses. Puristic and distinctly elegant. Very playful and accessible. Remarkably fresh and juicy.
